My dear, precious readers,
How are you? I’ve missed you and I’m so sorry I’ve been MIA these last few weeks. I haven’t posted as often as I would have liked. The truth is I’ve been feeling super overwhelmed by everything lately, and have allowed myself to be way too busy. I’m one of those people that tends to automatically say “yes” to everything, because I don’t want to miss out. I try to squeeze as much as I possibly can into a day and think it will all be fine, but end up frazzled, rushed, and stressed. Anyone else?? Ugh.
Sometimes I think I make myself busy to avoid uncomfortable feelings, like anxiety, disappointment, shame, etc. It’s easier to run around cleaning the kitchen, prepping food, folding the laundry, running the errands, than to face what you don’t want to face. But it’s all still there and I’ve got to deal with it to be able to continuing growing and moving forward!
Another thing I’ve got to remember is that NOTHING BAD will happen if I don’t get to the dishes, the laundry, the cleaning today. It will still be waiting for me tomorrow. I am not a bad or less than woman because I didn’t get it all done today. None of us are perfect. I’m starting to examine the expectations I have for myself some times and just realizing how unrealistic they are. How many of us hold ourselves to ridiculous standards and make ourselves feel guilty unnecessarily! Thank goodness our worth is NOT determined by how much we do or don’t get done. Just a reminder that I really needed this week.
Okay, enough rambling. My friend Hannah sent me the recipe for these Coconut Date Balls, and I’m in love. They are so so easy to put together and last in the fridge all week. I bring a few to work with me to snack on or grab one when I get home and they do just the trick. I don’t have a food processor, so I was worried my blender might not be up to task. But they came out totally fine. You will love these!
- 16 medjool dates
- ½ cup cashews
- ½ cup shredded coconut
- 1 Tbsp water
- optional add-ins:
- dark chocolate chips
- dried fruit
- other nuts
- Put the dates, cashews, and water in the blender and blend until a gooey dough forms. The dates will form a paste and the cashews should be in small chunks.
- Using your fingers or a spoon, take out a small portion of the dough and pat into a ball (I made mine about gum ball size). Place the shredded coconut in a shallow bowl, and roll the dough in the coconut until coated.
- Place the finished ball on a cookie sheet, plate, or other container. Repeat with the rest of the dough. Mine made about 28 balls.
- Store these bad boys in the refrigerated and serve chilled. They'll stay good like that for a whole week at least.
